Rainbow Summer Rolls with Spicy Almond Butter Sauce

Today’s salad can be tomorrow’s Summer Roll if you try hard enough.

If the thought of eating one more salad has you gagging, it’s time for a REBRAND. Same ingredients, totally different presentation. BOOM! A whole new recipe for your repertoire.

Don’t stop there...what else can you wrap up in a rice paper roll? Shrimp, rice noodles, leftover steak, grilled chicken, over mango, last night’s Chinese food...why not?

Rainbow Summer Rolls with Almond Butter Sauce

Ingredients:

Rainbow Summer Rolls:
  • 24 spring roll rice paper wrappers
  • 1 ¼ cup shredded or matchstick carrots
  • ½ large cucumber, thinly sliced by hand or on a mandolin
  • 1 ¼ cup shredded purple cabbage
  • 1 red pepper, julienned
  • 1 avocado, thinly sliced
  • torn lettuce or cilantro leaves
Spicy Almond Butter Sauce:
  • ¼ cup soy sauce
  • ¼ cup plus 1 tablespoon almond butter (any nut butter will work)
  • 1 tablespoon plus 1 teaspoon Sambal Oelek, aka spicy chile bean paste (leave out if you don’t like spice)
  • 1 tablespoon plus 1 teaspoon sesame oil
  • 1 tablespoon plus 1 teaspoon rice vinegar

Instructions:

Rainbow Summer Rolls:
  1. Fill a medium saute pan or bowl with warm water. Working with two wrappers layered on top of each other at a time, dip the rice papers into the water for a few seconds until the wrapper is just barely soft. Remove from the water and place onto a flat, clean work surface. It will soften as it sits.
  2. Pile all filling ingredients in a single line in the bottom third of the wrapper and roll like a burrito. I like to start with the avocado because it’s soft and won’t poke through the wrapper like the sharper carrots or cabbage will. Bring the lower edge up over the filling, fold in the two side flaps, and then roll the entire thing up as tight as possible. Handle with care, these wrappers can tear easily.
  3. Slice in half and serve alongside the Spicy Almond Butter Sauce. Store wrapped in wet paper towels. Best if eaten immediately.
Spicy Almond Butter Sauce:
  1. Combine all ingredients in a bowl and mix to combine. Leave out sambal oelek if you don't want this sauce to be spicy.
